Ingredients:
- 1 lb okra, washed, dried, and sliced
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon chili powder
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro, for garnish
Instructions:
- Heat oil in a pan and add cumin seeds until they start to crackle.
- Add onions and garlic, and sauté until golden.
- Add chopped tomatoes, turmeric, coriander, chili powder, and salt. Cook until tomatoes are soft.
- Add okra and mix well. Cook on medium heat until okra is tender and cooked through, stirring occasionally.
- Garnish with cilantro and serve hot with roti or rice.
