If you’re a fan of dosa, why not give it a Navratri twist with Kuttu Ka Dosa? Made with buckwheat flour (kuttu atta) and stuffed with a flavorful potato filling, this dish is the perfect blend of crispy and comforting. It’s a fun alternative to the usual kuttu puris during your fast.

History and Relevance
Buckwheat, or kuttu, is a popular ingredient used during Navratri fasting because it is gluten-free and easy to digest. It also provides the essential nutrients to keep you energized throughout the day.

Recipe

  • Ingredients:
    • 1 cup buckwheat flour (kuttu ka atta)
    • 1 boiled potato (mashed)
    • 2 green chilies (chopped)
    • 1 tsp cumin seeds
    • 2 tbsp ghee
    • Rock salt (sendha namak) as per taste
    • Fresh coriander for garnish
  • Instructions:
    1. Mix kuttu ka atta with water to form a smooth batter. Add a pinch of rock salt.
    2. Heat ghee in a pan, add cumin seeds and green chilies, then sauté for a minute.
    3. Add the mashed potatoes to the pan and cook for a few minutes with rock salt. Set aside for filling.
    4. Heat a non-stick tawa (griddle) and spread a ladle of the dosa batter in a circular motion.
    5. Cook on medium heat until crispy. Place the potato filling in the center, fold the dosa, and serve.
    6. Pair with mint-coconut chutney.
